I am so impressed with my husband! He loves green chile stew and thought that our leftover turkey would be well suited for it. So, he searched the internet, found a few recipes, then developed
his very own version! Not only did he come up with this whole idea himself, he cooked it himself, and we just enjoyed it for dinner. And to top it all off, he made it in the crockpot! I'm all for a great crockpot recipe, especially when you use one of
these little gems making clean-up a breeze! So, if you still have a pile of turkey to use up, give this a try:
Rich's Green Chile Stew1 T oil
1 large onion, chopped
3 cloves garlic, minced
3 lb cooked, cubed turkey (or chicken)
1/2 cup flour
2 cups baking potatoes, cubed
3 cups chicken broth or water
2 (15 oz) cans diced tomatoes, undrained
2 (4 oz) cans diced green chiles
1 (15 oz) can white beans (like Great Northern or Pinto)
1 T cilantro, chopped
2 tsp cumin
2 tsp oregano
1 tsp salt
1 tsp pepper
Heat oil in a skillet and sauted onion and garlic until translucent (~5 min). Add onions, garlic, turkey, flour, potatoes, broth/water, tomatoes, green chiles, beans, cilatro, cumin, oregano, salt, and pepper to slow cooker. Cook on LOW for 4-6 hours.
If you want to thicken the stew, about 30 minutes before you plan to eat, dissolve 2 Tbsp Corn Starch into 2 Tbsp water. Stir into the stew and continue to cook on LOW for 20-30 min.
Serve with sour cream and tortillas. Enjoy!
